Thai Basil Shrimp Skewers w/Coconut Black Bean Rice and Curried Green Beans

Thai Basil Shrimp Skewers

Serving Size: 4-5 medium to large pcs. of shrimp per skewer (use bamboo) and 2 skewers per person.

INGREDIENTS:
Shrimp, peeled, deveined
Thai Basil, clean, dry and chopped (amount to your taste)
salt and pepper to your taste
cayenne pepper (optional)

DIRECTIONS:
1. Put 4-5 peceices of shrimp per skewer.
2. Sprinkle chopped basil and seasonings over both sides of shrimp.
3. I use my indoor grill. First, I plug it in and make sure it's very hot (smoking). Then I spray a little cooking oil before grilling shrimp. Each side takes 2-3 minutes or just until shrimp turns pink.

NOTE:
* Use basil and mint if you can't find Thai Basil
* This cooks very fast so cook your sides first!

Coconut Black Bean Rice

Serving Size: 3 oz per person
Shortcut:
Use Uncle Beans 1 Minute Rice Except substitute Coconut Milk for Water. Buy a Can of Black Beans, Drain and Add to already cooked rice!

Curried Green Beans

Serving Size: 3 oz. per person

Ingredients:
Fresh Green Beans, Wash, trimmed, and par cooked in salted boiling water, strain and put in ice bath
your favorite curry (I like spicy)
either olive oil or butter

DIRECTIONS:
For 1 lb. of green beans, I would use 3-4 tablespoon of olive oil or butter.
1. Heat olive oil or butter in a saute pan for 1 minute (warm but not to the smoking point).
2. Add curry powder ( I like to add 1-2 tb.) and whisk into oil or butter.
3. Add green beans and saute for 2-3 minutes or just until coated with curry. Season with salt and pepper and serve at once!
