This section is dedicated to people who love delicious, gourmet-ish food that is easy and fast to prepare. Nowadays, everyone is on the go and being in the kitchen should not be a hassle, but rather an enjoyable as well as satisfying experience. Getting the entire family involved in the meal preparation will make it even more special! Therefore, I hope you all try these recipes and let me know how they turn out!
Polynesian Flank Steak with Coconut Rice and Stir-fried Veggies!

Polynesian Flank Steak

Serving Size: 4-6 oz per lady and 6-8 oz per man

Flank Steak, fat trimmed off

Marinade (for 3-4 lbs):
½ cup pineapple juice
½ cup papaya juice
¼ cup ketchup
2 Tb. Soy sauce (reg. or light)
1 Tb. Honey
½ tsp. Sesame Oil (optional)

DIRECTIONS:
1. In a resealable bag, combine marinade ingredients, close bag and shake until thoroughly mixed. If you want to serve with sauce, take 1/3 of marinade out of bag and set aside before step 2.
2. Add steak and allow to marinade for at least 3 hours before grilling. I normally marinade for 1-2 nights before since flank steak is a tough cut of beef.
3. Grill to your desired doneness, cover loosely with foil, allow to rest for 3 minutes, slice against grain, top with remaining marinade and serve!

Serve with Coconut Rice: Just use instant rice or regular long grain rice. Instead of water substitute with coconut milk (not cream!!!) and add a little salt to bring out flavor!

Note: I also like to serve this with stir-fried veggies. Use whatever vegetables you like and to give it a little Asian flavor just add a little sesame oil and oyster sauce! We like it spicy so I add a little chili paste, too!
